Even though the Bistro La Persaud’s website states a Grand Opening of January 26th, diners can enjoy their offerings now. The Bistro is located on the lower level of La Cité Francophone on Rue Marie-Anne Gaboury (8627 – 91 Street) and is a welcomed addition to Edmonton’s culinary scene.

A young chef by the name of Dilan Draper is creating some beautiful dishes here. What I like about Dilan is his passion of food and his creative streak. I think he’s a little bit of a perfectionist too, judging by the food that was coming out of the kitchen. Keep your ears and eyes on this young chef; I expect a bright future for him.

For an in-depth review, you can listen to my talk with CBC Radio Edmonton AM’s Ron Wilson here, and for pictures of the dishes, scroll down.

Steak Tartare
Foie Gras
Escargots Forestiere

Duck Rillette
Seared Sablefish with quinoa risotto
Succulent (Irving Farms) Pork Tenderloin
Accompanying crock of veggies
Lemon Curd Tart
Creme Brulee
Very reasonably priced dishes, great service, knowledgeable staff, and expertly prepared food from a chef who’s not afraid to take chances. Do you know anyone else who makes his own brioche and foie gras? I like this place. Call 780-758-6636 for reservations.
